Chicken Lasagna

Making Lasagna at home is a very simple hack. It is the ancestry of modern pasta, and is made by stacking up layers of the pasta sheet with fillings such as cheese, mince and some veggies.
Ingredients

Durum wheat(or maida) - 200g
Whole egg - 2
Yolk - 1
Water - 15g
Salt - A pinch
For white sauce
Butter- 15g
Flour - 15g
Milk - 150g
Egg - 1
For Mariana sauce -
Tomatos - 6
Onion - 1 finely chopped
Garlic cloves - 7 finely chopped
Method:
Add flour, eggs, water and salt in a bowl and work your hands around it to form a dough. once its tight let it rest for 20 minutes.
Roll out thin sheets to the size of your mold or casserole and keep them aside. In a deep pan bring water to boil and place each sheet individually, blanching them for not more than 30sec as they will later be baked too.
For the white sauce, melt butter in a pan and then add in the flour to form a roux and cook until its dry from any moisture looking not to add any color to the roux.
Take it off heat and gently add in the milk, while whisking the roux vigorously so as to avoid any lump formation. You can flavor it with cloves lightly as it won't give a very strong presence. Cook the sauce until it reaches coating consistency.
For the Mariana sauce, blanch the tomatoes marking a small cross section and peeling off the skin and removing the seeds, chop it real fine.
Saute the garlic and onions until they turn translucent and then add in your minced meat or veggies. Once the meat is cooked, add in the tomatoes, seasoning(salt, pepper, basil, oregano & parsley) and a teaspoon of tomato ketchup.
Beat one egg and add it into the white sauce along with some grated cheese.
To Layer the lasagna first spread a small amount of white sauce on the base of the dish and then place the blanched lasagna sheet, add another layer of white sauce and then a generous layer of the Mariana sauce and repeat this until you have 3 layers.
Place the dish in a pre heated oven at 170 degrees and let it bake for 15 minutes. Take it off and grate some cheese and place it back at 190 degrees for 5 minutes until the cheese is Gratinated.
Serve it along some sliced baguette with a chill glass of white wine.
