Tiramisu

The term tiramisu means 'lift me up'. It gets the very meaning from the way the dessert is played out, the rich creamy mascarpone mixture is set and raised up by placing soaked lady fingers(savoiardi) inbetween them.
Ingredients
Tiramisu cream:
Mascarpone cheese 117g
Icing sugar 15g
Yolk 30g
Whipped cream 25g
Cognac 10ml
Lady fingers :
Yolk 2nos
Castor sugar 12g
Egg white 1nos
Castor sugar 15g
Flour 19g
Corn flour 10g
Method
For the lady finger, beat the egg yolk with the sugar until ribbon consistency. On the other side beat the egg whites with the sugar till it forms soft peaks.
Fold in the flour into the yolk mixture and then gently fold the egg white into the yolk mixture.
Pipe small circles onto a baking sheet and baking in a pre-heated oven at 160degree for 15mins until golden in color.
For the tiramisu cream, beat the yolks and the icing sugar until light and foamy.
Cream the mascarpone cheese till it gets soft and add into the yolk mixture.
Add cognac into the mixture and then fold in the whipped cream.
Layering
Create a small decoction of coffee and sugar syrup.
In a glass pipe a layer of mascarpone cream and then soak the lady fingers in the coffee and place it over the cream.
Reapeat this over to form 3 layers.
Let it set in the fridge for. About and hour.
Dust with some cocoa powder and its ready to go!
