Stepping onto the Baker's side today, we are going to learn to make puff pastry!
It sounds complicated when it comes to making puff right? So I'll be guiding y'all on the process and the simple procedures which goes into making the lamination of the puff pastry, which will make you all pros when it comes to baking.
*Portion size 4

Ingredients
Flour - 150g
Butter - 15g
Sugar - 4g
Salt - 4g
Water - 80~100ml
Vinegar - 3ml
For Lamination : Butter - 80g
Method
Begin by mixing flour, butter, sugar in a bowl and then add the water(+vinegar)mixture to the mix.
Start to knead it until it all comes together and starts to form a soft dough.
Then lets add the salt to the dough and continue to knead it until it forms window panel consistency (we are adding salt later here, as we are allowing the gluten to form and stretch out) .
Mold the Dough into a ball having a smooth top and cut out a cross section (as seen in the image below). Cover with plastic wrap and let it rest in the fridge for 20 minutes.
Mean while let's Spread out the butter into a square shape slab and cover it with plastic wrap and leave it in the fridge to set for 20 minutes.
Take the dough and roll it open into a square. Place the butter in between the dough and wrap it close (as seen in the image).
Start to roll out the dough into a sheet cautiously, so as to not let the butter break out of the dough.
To laminate the puff we will be using book fold method. Divide the dough into two half's and fold both the sides into the center and then close the book (follow the images for further reference).
Repeat this process 4 times to form the lamination's giving a 20 minute break(refrigerating it) between each book fold.
Now that the lamination is ready, we can use it in different ways to procure various dessert and savoury dishes. We will be making chicken puffs and you can add any filling for that matter.
Roll out the dough to a thickness of 3mm and cut it out as desired(preferably 4by3).
Add the stuffing in the middle and seal it by brushing little egg onto the sides. Press it down with a fork and apply egg wash to the puff.
Pre-heat the oven to 220 degrees and and bake it for 15-20 minutes.
